In accordance with the classification currently adopted, a steam convector can be called any convection oven that has a switch that allows you to choose between at least three fundamentally different modes of operation: steam, convection (cooking dishes in streams of dry hot air), steam convection.
In modern steam convectomats, there are often additional operating modes such as low-temperature steam, regeneration mode (heating of pre-cooked dishes) and some others, which are essentially variations of the steam or steam convection mode. Unfortunately, consumers often confuse the concepts of a convectomat and a steam convectomat, which is not the fault of the sellers who offer significantly cheaper convectomats, like steam convectomats.
